Can an undead creature fly if a spellcaster zaps it with the spell Fly?

I don't see why not. The target of the spell is simply "Creature touched", and undead certainly qualify as creatures.

To me the question would be, without direct control from the necromancer, would the undead know how to react? Skeletons and zombies don't normally move around on the air, but I'd say, given the fact that they're mindless constructs, they would simply use flying to the minimum advantage.

So, if a skeleton is armed with a bow and is ordered to attack a target, it's not going to fly up in the air to do this if it doesn't have to. If it's target is flying, it might use Fly to chase after it and get in range, but it wouldn't be smart enough to fly up in the air and pelt arrows down on targets without specific instructions or direct intervention by the necromancer. If the same skeleton was armed with a melee weapon, it would simply charge across the ground towards its target, and only use flying to give chase.

Does that make sense? (Note: I don't tout myself as a rules guru, so I could be missing something and all of this could be wrong, but this is how I interpret what's established.)

From what I recall of the spell it requires only as much concentration as walking, so if the undead can walk, it should be able to fly just fine. Hollow seems right in that mindless undead probably won't use flying to its fullest tactical advantage but keep an eye on the creature description and stats. Undead that aren't mindless might have better moves, and undead that keep their old stats should be able to use flying to its full potential.

I appreciate the feedback.

I am working on an adventure in which the villain uses an undead creature to kidnap people. I was trying to figure out which undead creature would be best for such a task, especially if they are flying.

Sounds like a job for a wight, if you ask me. They're sneaky enough on the ground. Let them take to the air and possibly give them the benefit of an invisibility spell and you've got the perfect kidnapper.
