Got any tortillas? I make taquitos sometimes and they're a good finger food. Just rinse a can of black beans, mush with a fork until mostly smooth (I like some chunks) add chopped cilantro, salt and pepper to taste. Mix in shredded mexican cheese (Chihuahua if you want to be authentic, chedder/colby jack if you are less picky to a ratio of between 25% to 50% cheese to beans, depending on how cheesy you like it. Spread a layer on a small tortilla, roll up, and gently pan fry as many as you can fit in a saucepan. I serve it with either avocado or chipotle dip. Avacado dip is 1/2 avacado mixed with 1/2 sour cream. Chipotle dip is the liquid from canned chipotles mixed 1/3 to 2/3 sour cream. Or even fresh salsa is good to go along with it. |

My mom's deviled eggs.... Mix the yoke w 1000 island dressing, bacon bits, sweet relishing you want. Best eggs ever. I wish I could think more coherently.... I could come up with a number of ideas |

We make little nachos with the tostitos dipper chips. The ones shaped like a tiny bowl. Chop some chicken and cook it in a pan. Take individual chips and place them on a cookie sheet. Put a small amount of cheese and one piece of chicken in each chip, leaving room for toppings. Bake for about 10 minutes on 350, just enough to melt the cheese and brown the edges of the chips. For garnish, very finely chop, cilantro, cucumbers, cherry tomatoes and green peppers. Mix together and add lime juice to taste. Put some garnish in each chip. If I was taking these to a party, I would put the garnish on when I got there, not before, so the chips wouldn't get soggy. You could also bring a bottle of tobasco or other hot sauce for people to add some spice to their chips if they please. Edited by Witchy, May 18 2013, 05:26 AM.

I made thai chicken roll ups. 4 ingredients: ground chicken Thai peanut sauce Shredded lettuce (if you want to get fancy you can add shredded carrot and cilantro) Rice paper rolls Cook the ground chicken, add about 3/4c or so to taste of peanut sauce. Cool. Soak your rice paper. Place a spoon full of the chicken, some shredded lettuce (and carrots/cilantro) ion the rice paper. Roll like a burrito (Place the mix about 1/3 in, then fold the wrap over, tuck the ends and roll if that makes sense). Chill until you are ready to eat. |

I am waiting impatiently for the tomatoes in my garden to start to produce ... the basil's going great guns though. ![]() A dip for strawberries (and other fruit too) from my father's side of the family: 1 cup sour cream (use the good stuff!) 1 cup confectioner's sugar 1 tsp. vanilla Place the sour cream and sugar in a saucepan and stir with a whisk. Warm gently just until well blended. (The mixture may still be a bit cool--that's fine. Just don't heat it through--it will liquify.) Remove from heat and add the vanilla. Chill for at least an hour. |
