So...I'm looking for suggestions and or help. Most of you know my health crisis earlier in the year, all the tests I went thru, to not really find anything wrong, but since I've been gluten-free completely in my diet I have not had any symptoms so...we guess I have a gluten allergy. Thus, we changed my lifestyle, ta-da. I recently noticed that my usually strong fingernails are thin and weak, usually a sign of missing nutrients. So I'm taking vitamins again, but I'm thinking I'm missing something somewhere. I want to correct the problem, but I find I'm always eating the same things....it's just easier....plus, my appetite is TINY. Since this all started, my weight hovers between 113-117 pounds and I'm about 5'2. Any suggestions for keeping it interesting? Quick and easy snack options? Good soup suggestions? I eat a lot of rice chex, yogurt, apples, and gluten free crackers lately....oh and sandwich with gluten free meat if I have it. I made egg salad today....that was good until bad kitty stole my sandwich when I wasn't looking....

I'm not a nutritionist, so I'm going to just work with your proposed theory that you're not getting enough calories. Without blood tests or whatever, it would be hard to say which nutrient you're missing; brittle nails can be from iron, folic acid, B12, and a couple other things too. So I'll just brainstorming ways to maximize calories on a small appetite.You could try to up the calories in your go-to snack list. For example, instead of apples, try dried fruit, applesauce, apple crumbles made with gluten-free oats on top, smoothies, etc. You could stir high-calorie stuff into your yogurt, like a homemade granola with gluten-free oats, honey, nuts, etc. (PS, don't be afraid to make granola at home. Granola's ridiculously easy to make, definitely easier than cookies or muffins.) You could experiment with making a high-calorie trail mix or granola bars with the rice chex--for example, add nuts and peanut butter and bake them into granola bars. http://crockpot365.blogspot.com/ is a great slow cooker blog with lots of soup recipes (among other things!), and almost everything on that blog is gluten free because one of the author's kids has Celiac Disease. I have a pressure cooker cookbook that's full of delicious gluten-free recipes, but if you don't have a pressure cooker, you'd have guesstimate the cooking times. This is a little off topic, but I recently made these brownies and they are amaaaaaaaaaaaazing. It would be really easy to make these gluten free. (You'd just need gluten-free oats, GF baking powder, and GF vanilla extract. jn4jenny do you have a granola recipe? I'd love to try making it. Protein smoothies are rediculously easy, gluten free and portable. Mine are almond milk + plain greek yogurt + tablespoon of organic peanut butter + protein powder (not sure if its GF? there must be some though) + some frozen strawberries and banana chunks. Sometimes I throw in some spinach, too. I have this every morning for breakfast - it might be a bit high cal but its super filling and super yummy and super easy. I made a soup a lot during the winter that is kinda boring but its pretty tasty and very filling. 1 carton of chicken stock + the carton filled with water, 2 chopped carrots, "diced" collard greens, chopped celery, chopped cauliflower and broccoli. I add quinoa to mine but you could also add chicken or tofu. I also add chili powder and hot sauce cause I like spicey soup. Let it simmer for an hour or so. Its really not "fancy" but I like it and a pot makes me lunch for a week. Can you eat rice cakes with peanut butter? Cheese strings/baby bells and almonds are a daily staple for me too. I also LOVE corn pasta and its GF, like it way more than rice or wheat pasta. |

Actually, DH made me GF granola bars that are amazing...but I'm out of them and he hasn't had time to either show me how to make them or make me more, lol. They're easy and only a few ingredients... GF oats, brown sugar, honey, GF rice crispies and walnuts. Just not sure what quantities. I think that the protein shake might be a winner and I might need to get back to doing that again....I did those for a long time pre-GF and had good luck with it. Especially with winter and lack of fresh fruit, frozen was a good option. That soup sounds good and easy, something even I can handle

Oh I need one of those!!!!!!! I've always wondered if a gadget like that existed! But what do you do with them after? Eat them raw? I love, love, love spaghetti squash but it is such a PITA to cook and deal with. |

GHH, do you "do" chicken curry? I made an awesome crock pot curry earlier this week from the America's Test Kitchen Slow Cooker Revolution cookbook, and it was gluten free if you use gluten-free chicken. I served it over brown rice, and it was a huge hit with my houseguests. It was easy to make--lots of ingredients but basically you just dumped them all into the pot and let them stew. PM me your email address if you want the recipe! JTM I've kind of dumbed down my granola recipe from recipes I found online. I wanted a recipe that stripped granola to its bare essentials, so I can build on it with whatever I've got laying around. Here it is: 5 cups of oats 1/3 cup vegetable oil 1/3 cup honey (or if you're vegan, you can use maple syrup) 1/3 cup sugar 1-2 teaspoons vanilla extract 1 tablespoon of cinnamon (I like it really cinnamon-y, so you might want to start with 1-2 teaspoons and see how you like it) Any other kind of nut or seed you feel like throwing in, like sometimes I throw in flax or pumpkin seeds or whatever else I have on hand. But it's delicious without any add-ons too. Combine veg oil/honey/sugar until the sugar melts. You can either do this on the stove over medium heat or do it carefully in the microwave with a tall vessel that will catch minor boilover, microwaving one minute at a time. (I use a 4-cup Pyrex measuring cup for the microwave.) Add the vanilla extract once the mixture is hot enough to have melted the sugar, which will burn off the alcohol in your vanilla extract. Pour this liquid mixture over the oats (and whatever other seeds or nuts you want) in a big bowl. Sprinkle the cinnamon on and mix again. Spread on a baking sheet over parchment paper on a baking sheet, then bake at 250 degres for about 45 minutes. I usually flip the stuff halfway through to make it toast evenly. Cool, then crumble, and add dried fruit if you like. I usually add raisins or dried cranberries. Store in an airtight container. GHH, have you tried cold fruit soups? Strawberry soup, peach soup, etc. They're pretty easy to make and can be a nice alternative to smoothies and applesauce. Edited by jn4jenny, Oct 11 2012, 11:27 AM.

My roommate was gluten free briefly and trying to eat healthfully. Her grandmother is a wonderful, wonderful woman who tries to feed us all - she is perpetually sending me all kinds of things when she sends food for my roommate. Most recently, it was a flat of absolutely gorgeous peaches that she picked. When I went to get them from her, she tried to send me home with her whole kitchen - including her husband's sandwich. But when she found out my roommate was trying to gluten free and eat healthy, she tried to buy all things that she was pretty sure were gluten free. So please let me know if you have any need for a monster sized bucket of taco bell queso dip. We do believe that it IS, in fact, gluten free...
