What to do with cucumbers?

We're on a bridge, Chaaaaaaaaarlie!

Yogurt sauce:
1 cup plain greek yogurt
1 tbsp chopped fresh dill
1 tbsp olive oil
2 tsp lemon juice
salt and pepper

Cucumber salad:
1/2 lb cucumbers
2 tsp chopped fresh chives
1 1/2 tsp minced shallot
2 tsp olive oil
3/4 tsp lemon juice
salt/pepper to taste

1. Combine yogurt sauce and chill.
2. Slice cucumbers into super thin slices, put into a bowl other ingredients for cucumber salad, and chill.
3. Salt and pepper salmon and grill to your desired doneness. Put on plates, dollop yogurt mixture on top or on the side, and spread the cucumber mixture on top of all that (I usually leave the extra juices from the cucumber salad in the bowl). Sprinkle with some chopped dill and serve.

Anyways, sorry but aside from cucumbers for your face (they're really refeshing over your eyes or just laid on the skin) I have no real practical uses (and i'm guessing you aren't looking for someone to simply suggest 'eating' them haha)

I also love a simple greek salad of chunks of cucumber, tomato, diced red onion, feta cheese, black olives, with a sprinkling of black pepper and oregano + a light dressing of olive oil mixed with lemon juice.
Mmm...that's what I'm going to make for dinner! :)
We have this at least 3 times a week! but it has to be GOOD high fat Feta...and I love fresh basil instead of the oregano. Yum.

Also LOVE peanut butter and cucumber sandwiches with a touch of salt and pepper.

Thinly sliced Cucs and some onions and some ranch dressing is easy and fast and yummy for a side salad.

Gotta try the salmon and greek yogurt dish. That sound delish!

My mum introduced us to those when we were little. I loved them toasted or not. Yummy :)

I just found a new recipe I like. Peel cuke and cut longwise. Remove seeds (easiest
with a spoon). Cut remaining cuke into spears about an inch long each. Marinate
in lemon/ginger/sesame/soy salad dressing (bought mine at Aldi's of all places). Very
good, goes especially well with a stir fry dinner.

Oooh might have to try that then BT...sounds interesting, i like all the players individually....never tried them combined.

My dad used to make us bologna rolls with cream cheese. Just spread it on and roll her up. It was soo yummy.
