What to do with cucumbers?

The BO I ride for just gave me a ton of very yummy, homegrown cucumbers.....and I have no idea what to do with them. I enjoy eating them plain with salt/pepper but would love to hear what your favorite cucumberesque recipes are! I know I've had yummy cucumber salads in the past but no idea how they were made/what was in them. I think it'd make the perfect meal/snack on these hot, muggy days. Fire away! Thanks ladies!

Make pickles! :) I'm just kidding.....I'm drowning in cucumbers and making pickles every day. I'm afraid to look in my garden.

You could make Gazpacho....obviously need some other veggies but it uses lots of cucumbers.

Or Tzatziki

Ingredients:

2 Cups Yogurt
1 large Cucumber, peeled, seeded and diced
2 cloves garlic, ppeled
2 to 3 teaspoons white wine vinegar
2 teaspoons chopped fresh mint
2 teaspoons snipped fresh dill
Salt
Ground white pepper
1 tbsp extra vrigin olive oil

Directions:
Set a very fine mesh sieve or a colander lined with a coffee filter or several layers of cheesecloth over a bowl. Add yogurt, and let drain at room temperature for at least 2 hours or covered, in the refriegerator for up to 24 hours.
In a colander toss together diced cucumber and 1 teaspoon salt - let stand to drain for a half hour. Press the excess water out of the cucumbers, rinse quickly, and blot dry.
Mash together 2 cloves garlic and 2 or 3 pinches of salt until a paste is formed.
Combine the yogurt, cucumber, and garlic in a medium bowl along with the vinegar, mint, dill, and salt and white pepper to taste.
Drizzle tablespoon of olive oil over the salad and serve.
4- 6 Servings

Best with warm pita triangles.....mmmmmmmmmm :)


Or Sweet & Sour Cucumber Salad

Cucumbers (1 1/2 pounds total), unpeeled, very thinly sliced
1 tablespoon coarse kosher salt

1/2 cup distilled white vinegar
1/4 cup finely chopped fresh dill
3 tablespoons sugar
1/2 teaspoon freshly ground black pepper

Place cucumber slices in colander. Sprinkle with salt; toss to coat. Let stand 15 minutes, stirring occasionally.
Meanwhile, for dressing, stir vinegar, dill, sugar, and pepper in large bowl until sugar is dissolved.
Drain cucumbers well; pat dry. Add cucumbers to dressing and stir to blend. Refrigerate at least 15 minutes and up to 2 hours; serve cold.

I usually make this with apple cider vinegar, but really, whatever you prefer. And I never pat my cucumbers dry....seriously, who has that kind of time? ;)

I add chopped walnuts to my Tzatziki. Yummity yum yum.

Also, we slice and dip in the following low fat dressing (scale it down for a smaller crowd):

1 cup low fat cottage cheese
8oz plain low fat yogurt
1 clove garlic minced
1 1/2 teaspoon balsamic vin
1 1/2 teaspoon sea salt
1/2 teaspoon dill
1/2 teaspoon oregano
1/4 cup chopped fresh parsley (<-- I never have this and tend to leave it out )
1/4 teaspoon peper

Blend cottage cheese in blender or food processer until smooth (I have one of those soup blending things that also works). Add other ingredients and and mix well until blended. Dip works well with carrots, cucumber, broccoli, peppers or string beans.

I'm with gunnar, marinate in sugar, vinegar and some dill-- stick in the fridge in tupperware and snack on 'em when it's hot out!

For those who are drowning in cukes like I am, you can make either a virgin or spiked cucumber cooler! I learned this recipe at a wedding in Mexico and it's incredibly refreshing: Peel and slice cukes into chunks and puree in blender. Strain and retain the cucumber juice. (You need a lot of cukes to yield sufficient juice -- like 3 per person, maybe more.) Then add sugar and fresh lime juice to taste, a little cold water, pour over ice and enjoy as is or add a shot of vodka, white rum or tequila. To really go crazy, you can add some watermelon to the cukes in the blender and puree or even some fresh mint or basil.

I also love a simple greek salad of chunks of cucumber, tomato, diced red onion, feta cheese, black olives, with a sprinkling of black pepper and oregano + a light dressing of olive oil mixed with lemon juice.

I simply slice them and marinate in dressing. refrigerate for a couple of hours, and snack on them! yummy

sliced cucumber sandwiches
Ingredients

2 thick slices whole wheat bread
2 tablespoons cream cheese, softened
6 slices cucumber
2 tablespoons alfalfa sprouts
1 teaspoon olive oil
1 teaspoon red wine vinegar
1 tomato, sliced
1 leaf lettuce
1 ounce pepperoncini, sliced
1/2 avocado, mashed

Directions

Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

Grill salmon with salt and pepper. When it's done, top the salmon with Greek yogurt mixed with dill, garlic, and olive oil, and then slice the cucumbers super thin and put a pile of them on top of the yogurt mixture. It's a fabulous mix of warm, cold, salty, sweet, tangy, and creamy!

(I have the exact measurements for the yogurt mix if anyone's interested...will have to go find the recipe)
