What to do with a Pair of Pumpkins

There are a gazillion pumpkins growing on the farm. I brought home two smallish ones with me today... any suggestions/recipes beyond the obvious Pumpkin Pie and toasted pumpkin seeds (awesome in homemade granola)...?

What variety are they? Pie making or carving/decorating? If they're a pie making variety (Cinderella, Long island cheese, Sugar pie, etc) or a soup/stew kind we can help you. :)

I made these from the Godiva website a few years ago and they were fabulous.

Pumpkin Squares with White Chocolate Cream Cheese Frosting



* Yield: 24 squares
* Difficulty: *Easy
* Preparation: 45 minutes plus baking, cooling and chilling times.
* Special Equipment:

Pumpkin squares:
1 cup all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon grated nutmeg
1/4 teaspoon ground allspice
Generous pinch of ground cloves
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1 1/3 cups packed dark brown sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1 cup solid-pack pumpkin
1/2 cup coarsely chopped walnuts or pecans
1/2 cup dark raisins

White chocolate-cream cheese frosting:
4 bars (1.5 ounces each) Godiva Solid Ivory, coarsely chopped
2 packages (3 ounces each) cream cheese, softened
1/4 teaspoon vanilla extract
3 tablespoons butter, softened

Garnish (optional):
1 bar (1.5 ounces) Godiva Dark Chocolate, melted

Make the pumpkin squares:

1. Preheat oven to 350F. Spray 13x9x2-inch baking pan with vegetable cooking spray.

2. Stir together flour, baking soda, cinnamon, ginger, nutmeg, allspice, cloves and salt

3. Beat butter in mixing bowl until creamy, using electric mixer at medium speed. Add brown sugar and beat until light and fluffy. Add egg and vanilla, beating until blended. Add flour mixture alternately with pumpkin, beating until just combined after each addition. Stir in walnuts and raisins. Spread batter in prepared pan.

4. Bake for 25 to 30 minutes or until a toothpick inserted into center comes out clean. Cool completely in pan on wire rack.

Make the frosting:

1. Place solid ivory in small microwave-safe bowl. Microwave on medium (50% power) for 1 minute. Stir. Microwave 30 seconds more or until solid ivory is softened. Stir until smooth and let cool.

2. Beat cream cheese in bowl until light and fluffy, using electric mixer at medium speed. Beat in vanilla and butter. Gradually beat in cooled solid ivory and beat until smooth and shiny. (If mixture looks slightly curdled, simply continue beating until smooth.)

3. Spread frosting on pumpkin cake. Refrigerate for 30 minutes or until frosting is slightly set. If desired, drizzle frosting with melted chocolate.

Pumpkin Lasagna
Serves 12

Italian-Americans often serve lasagna before their Thanksgiving turkey, so Mealtime.org decided to put the most iconic Thanksgiving fruit into lasagna.

Ingredients:
1 tablespoon extra-virgin olive oil, divided
2 large onions, chopped
1 (4-ounce) can sliced mushrooms, drained
3 cloves garlic, minced
1/4 teaspoon dried Italian seasoning
1 (15-ounce) can mixed greens, drained
1 (15-ounce) can 100 percent pure pumpkin
1 (15-ounce) container ricotta cheese, preferably whole milk
3/4 cup freshly grated Parmesan cheese
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/8 teaspoon grated nutmeg
1 cup Alfredo sauce
15 lasagna noodles (about 3/4 pound), cooked according to package directions

Directions:
1. Heat oven to 350 degrees F. Heat 2 teaspoons of the olive oil in a large skillet over medium heat. Add onion and saute until golden brown, 5 to 10 minutes. Add mushrooms and cook until browned, about 5 minutes. Add garlic and Italian seasoning, and cook for 1 minute. Stir in the greens and heat through. Set aside.

2. Mix pumpkin and ricotta cheese in a large mixing bowl. Stir in Parmesan cheese, salt, black pepper and nutmeg until well combined. Grease the inside of baking dish with the remaining teaspoon of olive oil. Spread 1/2 cup Alfredo sauce over the bottom of the baking dish. Top with 3 noodles, covering the bottom of the dish. Spread 1/4 of the pumpkin mixture over the layer of noodles and scatter 1/4 of the green mixture over the pumpkin. Repeat layers of noodles, pumpkin and greens, until you have 4 layers of each.

3. Top with the remaining 3 noodles and spread the remaining 1/2 cup Alfredo sauce over the top. Cover with a sheet of foil and bake for 45 minutes or until bubbling around the edges. Remove foil and top with remaining Parmesan cheese. Return to the oven for about 15 minutes or until lightly browned. Rest for 15 minutes and cut into 12 squares.

OK Headless, I have a bone to pick with something stated in your lasagna recipe. I'm an Italian-American, and I just have to say that my family never, ever has served lasagna as part of the Thanksgiving meal!! Home-made cannoloni as a first course for Christmas, yes. But lasagna for Thanksgiving . . . uh, no. :teehee:
