TEXASBREATH'S CILANTROBREATH'S JILLINTEXAS' Chicken curry salad:

I large can chicken breast, drained (I prefer white meat)
I can water chestnuts, drained, chopped pretty small
2 tbsp sweet pickle relish, or chop up some sweet gherkins
1/2 medium red onion, finely chopped
1 carrot cut into small pieces
I small piece of ginger, finely chopped or a dash of powdered ginger
1 handful FRESH cilantro, gathered after terrifying storm (makes them more tender) Finely chopped
dash of sea salt
1 Tbsp YELLOW curry powder
Mayonaise to moisten
sprinkle with sliced almonds or crushed peanuts

If you like heat add a little jalapeno (remember the heat is in the SEEDS, remove them for mild flavor or add a ton for some TEXAS BREATH, or a squirt of Sriracha sauce (red pepper sauce in Asian food section)

I find it easier to throw the water chestnuts, carrots, onions, cilantro, pickles into a small food processor (sound familier OTF??) and give it a quick whirl.

Mix all ingredients and let sit for a bit to allow flavor to expand. I like mine on crackers. I like mine a bit dry, so I add just 1/2 cup or less of mayo. It depends on how you like it!

I also sometimes prepare some bean noodles (rice noodles...) cook them up with some Sriracha sauce (pepper) then let them cool and serve with the chicken salad.

I have a great bananna muffin and chocolate chip cookie recipie. They are at home (i'm at work - naughty! haha) But i'll share when i have the chance to look them up.

The chocolate chip cookies will save your life! they're 100% fat, but 100% heaven.

BH1 - did you say that you can buy CANNED chicken breast???? I'm in awe! Is it cooked or raw?

They may have TIM TAMS, but we have CANNED CHICKEN! :nyah: :nyah: :nyah:

Roasted Summer Corn Salad - like the deli at Whole Foods.

Trixie and I love this stuff, it is like eating summer in tiny bites and I used to buy containers of it to bring along to horse shows. Unfortunately, the WF website list of recipes fails to give out details for this particular one.

I put my head together with some co-workers and we figured out that it had a tiny bit of cilantro and a very light dressing but that was as far as we got until a month or so ago when I found what sounded like THE recipe!

Not only that, I had all the ingredients at home so I made it that very afternoon and it was the bomb! Super easy to make and tastes just as good for a fraction of the Whole Paycheck price.

Ingredients

5 ears corn, boiled or grilled
3 table spoon olive oil
1 tomato, seeded and diced
fresh cilantro, to taste
1 red onion,chopped
1 green bell bell pepper, diced
pepper
1 lime,juiced
salt
pepper

Directions

Remove kernels with paring knife and place in large bowl. Add tomato, onion, and green pepper. Toss to combine. Add lime juice and olive oil. Snip in cilantro and season with salt and pepper. Serve
