Oh you silly!! We drink it with margaritas. The alcohol cuts the grease...like DUH! :teehee: :nyah:

Texas sausage queso and chips looks yum!! I'll have to try that.

One of my fave dips and SO easy:

Chipped beef dip--

Just mix:
1 package of chipped beef, chopped
1/2 onion
package of cream cheese
a couple of tablespoons of sour cream (or milk works too)

20 min in a 350 oven and preso---yum!! Great with mini rye breads or club crackers. Or whatever.
It looks very festive when you put chopped nuts on top (walnuts or pecans) but I don't usually do that anymore...

After the holidays I'll see if I can't find somewhere to do an e-book, or even a little blog type thing, with each recipe having it's own blog entry (that way you can search them). I have a great and simple recipe for spinach artichoke dip that I'll add to it when I can get it done.

Pork Sauté with Apples

3 T all purpose flour
1 tsp ground cumin
½ tsp freshly ground black pepper
¼ tsp salt
¼ tsp ground cinnamon
Pinch freshly grated nutmeg (optional)

1 pound boneless pork chops (4)
1 tbsp olive oil (or 2 tsp oil / 1 tsp bacon drippings for depth)
1 sm/med clove garlic minced (optional)
1 pound apples, cut into 1 inch thick wedges or dice
¾ cup defatted chicken broth or vegetable broth
2 Tbsp honey
¾ cup water
1 tsp cider vinegar
1 tsp balsamic vinegar (optional)
2 Tbsp raisins
1 tsp unsalted butter

Mix flour, cumin, cinnamon, salt, pepper and nutmeg (if using) in shallow bowl. Dredge chops in flour mixture, patting into surface; reserve excess flour mixture.

In large heavy skillet, heat oil (or combo) over medium–high heat. Add pork chops and sauté 4-5 minutes per side or until golden brown and cooked through. (Obviously sauté time will depend on chop thickness). Transfer chops to platter and cover loosely with foil to keep warm.

Add apples, garlic, ½ c broth and 1 T of honey to skillet. Cook over medium heat until apples are tender and glazed but not mushy, turning apples frequently and scraping fond from skillet. Remove from heat and spoon apples over chops.

Combine remaining ¼ c broth, remaining 1 T honey, vinegar and water with reserved seasoned flour and whisk until smooth. Add to skillet and bring to boil over medium heat, stirring constantly (or at least frequently!). Add raisins and simmer, stirring frequently until sauce is thickened. Add butter, remove skillet from heat and stir. Pour sauce over chops and apples.

Serves 4


PORK CHOP WITH PAPRIKA AND SAGE CREAM
2 ½ tsp. imported medium-hot paprika (or use sweet paprika and mix
with 1/8 tsp. cayenne pepper)
½ tsp. salt
¼ tsp. white pepper
4 (6-8 oz.) pork loin chops, lean and 1-inch thick
2 tbsp. butter (1/4 stick)
1 tbsp. vegetable oil
3 tbsp. minced shallots or green onions or garlic
2 tsp. minced fresh sage (or 3/4 tsp. dried, crumbled)
½ c. dry white wine
¾ c. whipping cream ( I use 3/4 cup milk with 1 Tbsp flour whisked in for same texture with much less fat)

Combine paprika, salt, and pepper in small bowl. Spread 1/2 of mixture on pork chops, pressing into both sides. Reserve remaining paprika mixture for sauce. Melt 1 tablespoon butter with oil in heavy large skillet over medium heat. Add pork chops and brown well, about 3 minutes per side.

Reduce heat to medium-low and saute until just cooked through, about 3 minutes longer per side. Transfer pork chops to heated platter. Cover with foil to keep warm.

Pour off drippings from skillet. Add remaining 1 tablespoon butter to skillet and melt over medium-low heat. Add shallots and cook 2 minutes, stirring occasionally. Add remaining paprika mixture and minced sage and cook for 30 seconds.

Add wine and boil until liquid is reduced by half, scraping up any browned bits, about 3 minutes. Reduce heat to medium. Stir in cream. Simmer until thickened slightly, stirring frequently, about 3 minutes. Season with salt and pepper. Add any pork juices accumulated on platter. Spoon sauce over pork chops. Garnish with sage. Serve with spiral pasta and vegetable of your choice.

Serves 4

I halve both of these recipes all the time as there are only 2 of us, and usually use farfalle with the Papriia Sage Sauce. They are both pretty easey, you just need to measure and set out the additives before hand. I'll look for some other recipes later!

The one with the apples, do you drain the skillet after you take the pork chops out of it?

You can drain some out if you want - I usually trim all visible fat off the chops before I cook them, so there's not really much to drain. I also generally substitute dried cranberries for the raisins - it's prettier (plus I always have them as I get them at the salad bar - cheaper than craisins - and we put them in salads and oatmeal). It's a really easy dish.

And I made the paprika cream one on a whim, only to discover that Mr. Coriander love it, which I never would have expected. I'll look for some easy chicken recipes tonight. ;)

One of my FAVORITE dips - and super easy!


The Herlihy Girl's Crabgrass Dip

preheat oven to 350F
1 can Asparagus
1 can crab meat
1 small container of soft cream cheese
1 cup of parmesan cheese
1 cup mayo
little bit of crushed garlic or horseradish if you like

put all ingredients in food processor until well blended and no chunks
pour in cassarole dish
place in oven until bubbly at the edges (about 30 mins)
add a bit more parmesan cheese on top and some slivered almonds (or other crushed nuts) if you want to be fancy
Put back in oven for 15 minutes

let cool 10 minutes then serve warm with triscuits or some fancy crackers....


very very yummy
