I kept all the recipes from Christmastime. The more recent ones have not been included.
If there's a computer-savy volunteer - maybe he or she will create an e-book for us???

here are some tempting recipes.... :innocent:

Amazing French Toast Concoction
Little Diva

You need a loaf of white bread (NOT whole wheat), some eggs, a couple of small containers of egg beaters, some nutmeg and cinnamon and milk and a deep casserole dish.

Grease the casserole dish.
Mix the eggs, egg beaters, nutmeg, cinnamon and milk together.
Depending on the size of the dish, you can use between 6 and 12 eggs.

Start by pouring about 1/2 cup of the milk mixture on the bottom of the greased casserole.
Next, add a layer of bread. You will have to cut some of the pieces so they fit right to the corners.
Then pour some of the milk egg mixture over the bread so it is all covered and wet. Repeat right up to the end.
You want the bread to be COMPLETELY soaked and covered in the egg mixture.

Cover and refrigerate overnight.
In the morning, pre heat the oven to 400 degrees and bake that sucker to a golden brown on top.
It takes at least an hour to cook through because you don’t want it to be running at all when you cut into it.
Remember, the deeper the dish, the longer it takes to cook. The casserole I use takes about 3 layers of bread and eggs.

Serve HOT with syrup and sausages and mimosas and fresh brewed coffee.
Cut up some strawberries too for a healthy touch!

Combine cream cheese and confectioners' sugar and spread over pecan mixture.
Spread half of the whipped topping over the cream cheese layer.
Mix package of vanilla pudding using 1-1/2 cups of milk.
Spoon evenly over the whipped topping; spread until layer is even.
Mix package of chocolate pudding using remaining 1-1/2 cups milk.
Spread on top of vanilla pudding.
Spread remaining whipped topping on top and sprinkle with shaved semisweet chocolate or mini chocolate chips.

Grandma’s Famous Onions
JustMagic

Heavily butter a dish
*peel and 1/2 onions for 20 people (med sized white onions work best)
*put onions in dish and add as much water as needed to cover onions 2/3 of the way (onions should not be touching but really close is ok)
*in bowl mix together the following.....
*3/4 cup melted butter
*6 T Holland House Red Wine Vinegar (often I just use red wine)
*6 T Honey
* 1 1/2 tsp salt
* 1 1/2 tsp yellow mustard
* 3/4 tsp ground sage

*thicken the mixture with corn starch and drizzle over the onions (onions should almost be completely covered with liquid
*bake at 350 degrees for 1 1/2 hours or until you can easily pierce the onions with a fork.

We put them on top of stuffing and eat them that way mixed with the stuffing and mashed potatoes.

I have all saved in WORD. If somebody wants to add to the collection, send me a PM and I'll save it in my TOC recipe file.

Again, anyone who wants to create an e-Book, chime in anytime!

I am taking 3 courses and shouldn't be hanging around on TOC! heehee

Oh Jilli....

We need your receipes here for the pumpkin loaf and the cranberry bread. I made those last year for a cookie exchange at work and they were fabulous. Everyone here liked them too.

I remember the cookbook idea too...

Oh good! Well lets see if we can keep this bumped so we can get input from everyone.
I am FAR from computer savy. I have enought trouble with copying and pasting. LOL
But I am hoping that someone will hop on and volunteer. I can follow instructions. :innocent:
If I have time this weekend, instead of messing with dragons, I will search the way back threads and see if I can find the original!

Cranberry Lime Nut Bread
Jillintexas

The following recipe yields 3 9x5 inch loaves.

3 cups sugar
3 tablespoons of grated lime peel or grated orange peel (or mix the two to taste)
1 1/2 cups water
1 1/2 cups orange juice with pulp
1/4 cup lime juice
6 tablespoons oil
3 eggs
6 cups all purpose flour
4 1/2 teaspoons baking soda
3 tsp. kosher salt******* (I left this out originally...sorry!!)
3 cups fresh chopped cranberries (or frozen, but DO NOT dethaw before chopping and adding)
3 cups chopped walnuts or pecans (I like mine chunky, but do as you will!)

Heat oven to 350 degrees. Grease bottoms of 9x5 inch bread pans. In large bowl combine sugar, orange peel, lime peel, water, orange juice, lime juice, oil and egg; blend well. Add flour to above mix, baking powder, salt and baking soda, stir just until dry ingredients are moistened. Stir in cranberries and nuts. DO NOT OVERMIX, or you will have pink bread!

Bake at 350 degrees, for 50-60 minutes or until toothpick inserted into center comes out clean. Cool ten minutes, then remove from pan and cool completely.

LD-

Pumpkin Bread
Jillintexas

3 1/2 cups all purpose flour
1 1/2 cups white sugar
1/2 cup dark brown sugar
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
2 teaspoon cinnamon
1 teaspoon nutmeg
1 cup oil
2/3 cup orange juice with pulp
4 eggs
1 16 oz. can of pumpkin (2 cups)

Heat oven to 350 degrees. Grease bottom only of two 9x5 inch bread pans or three 8x4 inch loaf pans. In large bowl combine flour, sugar, baking soda, salt, cinnamon and nutmeg; mix well. In medium bowl combine oil, orange juice, eggs and pumpkin; blend well. Add to flour mixture; beat one minute on medium speed. Pour batter into greased pans.

Bake at 350 degrees for 60 to 70 minutes or until toothpick inserted into center comes out clean. Cool ten minutes, remove from pans, cool completely.

*I can usually tell when mine is done as the top will crack down the middle and it's firm to the touch. I also like to add walnuts or pecans to the top and a little bit of brown sugar, if you like that sort of thing. That way, if someone doesn't like nuts (the bastards!!) they can easily remove them.

Crock pot, one dish, and hot dip junkie here......
I have a couple of great recipes, but honestly I do not measure, so any measurements I give are definitely suspect. :innocent:

Crabgrass dip (Asparagus and crab), Choking cheese (atichoke hearts and parm dip), Banana bread, Chili, beef stew, BBQ ribs...and this past weekend I made a ranchers pie (shepards pie but with ground beef) that came out great. And a jambalaya......

also big on chicken and rice in a cassarole dish - mexical chicken, lemon pepper, mushroom, cajun.

I love to cook but it is so darn hard getting amounts right for one person.
