For all you dieters...; replace pasta with lentils!

I really like lentils, and many kinds of beans really. My family is not such a fan of lentil soup, but I subject them to it once in a while anyway. :P I found a new recipe for lentil soup with barley in it, we'll see if they like that better.

Thanks for the tip on substituting for pasta. I may have to try that sometime!

Not as much protein but less calories is to take a peeler to a zuchini and make strips that you use (uncooked) as pasta. It's good with pesto or a garlicy veggie sauce. Probably not so great with your usual tomato based sauce...

a similar idea is spaghetti squash. It's really tastey, especially when it's treated like pasta and made into spaghetti. Also good just with a bit of butter and salt and pepper. Yum

It really is very good. Especially in a spicy recipe. Much better protein source than fatty meats.

Y'all are speaking my language! I make a lentil bake with leeks and a little blue cheese; it's great. Dal is great in the winter, too. And edamame all the time! :clap:

The ratatouille recipe in the Moosewood cookbook is one of my favorites - so tasty and it's pretty much just vegetables.

Steamed/mashed cauliflower also is a good substitute for mashed potatoes. Just steam the cauliflower a little longer than usual, so that it's soft. Then mash it with a little butter and/or chicken or veggie broth. Yummy

I forgot the lentil bake recipe today but I'll get it soon! It's really easy, lentils, a little broth, breadcrumbs, leeks, mushrooms if you want them, an egg to hold everything together and blue cheese on top. Now I'm hungry!
