This is very good with tart apples like Granny Smith, best of all is a combination of different kinds. I use 2 each of GS, Macs, Cortland and Yellow Delicious. Yum, Yum!

Piecrust for a 10", 2-crust pie

6 to 7 cups peeled, cored and sliced apples
1/2 cup dark brown sugar
1/2 cup white sugar
1 teaspoon cinnamon
2 1/2 tablespoons cornstarch
juice of 1/2 small lemon
2 tablespoons butter

Mix the dry ingredients in a small bowl til well-blended and piour over the apples, tossing them well. Pile them into the shell. Sprinkle with the lemon juice and dot with little pats of butter. Cover with the top crust, pinch the edges well, and cut gashes in it to let the steam escape. A sprinkle of sugar on top is nice.

Put the pie dish onto a thin baking sheet or a sheet of foil with the shiny side up (to reflect the heat). Put it on the bottom rack of the oven and bake at 450 F. for 15 minutes. Reduce the heat to 350 F. and bake for an hour, or until well-browned and the juices are bubbling and the apples are tender.
