One of Auntie Sally Lesh's fine recipes, also one of the staples of the Gustavus Inn in Gustavus, Alaska, run by the Lesh family since the '60's. Apple Crumb Pie OVEN 350* 1 unbaked 10" pie shell 4 to 5 tart green apples, cored and peeled or not, as you like, and chopped to about pea size Mix together and add to the apples: 1 1/4 cups sour cream 3/4 cup sugar 2 beaten eggs 3 tablespoons flour 1 teaspoon vanilla 3/4 teaspoon salt Topping: 1/2 cup sugar 1/2 cup flour 1/2 cup butter (1 stick) 1 teaspoon cinnamon Mix with a fork or a pastry blender til crumbly. Pour the apple filling into the unbaked crust and bake it for 1 hour. Remove from the oven, carefully sprinkle the topping evenly over it, return to the oven and bake another 20 minutes. Cool on a rack and serve chilled. |
