1/2 cup cold milk
1 package (6-serving size) vanilla flavor instant pudding mix
1 tsp. pumpkin pie spice
1 cup canned pure pumpkin puree (not pie filling)
2 1/2 cups frozen non-dairy whipped topping, thawed
1 graham cracker pie crust

In a large bowl, beat the pudding mix, spice and milk with a wire whisk for one minute. Whisk in the pumpkin. Fold in the whipped topping and pile into the crust. Refrigerate for at least two hours.

Cover with slightly sweetened whipped cream before serving.

Hey, this is a good, one, thanks. I'm always looking for something I can do low sugar for DH and I can use sugar free pudding mix with this one. He'll love it.
