I got some frozen Pepperidge Farm Puff Pastry on sale. Defrost the pastry. Use nice firm Granny Smiths. Heat the oven to 425* while you fix these. Pare and core but do not cut through the bottom (blossom end). Stuff the apples with some light brown sugar and cinnamon to taste; add a nice chunk of butter on top. Raisins if you like them. Cut the puff pastry to comfortably wrap the apples (they do not have to be completely covered). Place in an ovenproof dish. Bake for an hour or til the pastry is nice and brown and the apples give off their juice as a syrup in the bottom of the dish. Serve with cream, ice cream, or whipped cream. Any leftover pastry can be brushed with beaten egg yolk and heavily sprinkled with Parmesan cheese. Cut this strips of this and twist the ends in opposite directions to make spirals. Lay on a cookie sheet and bake for about 15 or 20 minutes. Watch closely |
