Beef Pot Roast with Gravy. Fully cooked ready in 8 minutes...microwave. This is perfect for camping, quick meal for one or two. Kids out, just me an my pot roast.
Very tender, very good.

I know they have a couple of these meals in containers in the meat department. I have never tried them. Is there a particular brand you are talking about? "Meals Made Simple? Brand name?

I like to make 'em up myself, starting about 2/3 weeks before we take off.
Brisket or pot roast in gravy
Cooked chicken pieces in the broth and plain for salads.
Meatloaf
and I usually start us out with some homemade soup the first day...just take it frozen in a gallon bag and let it thaw out that day. We usually drive until dark that first day, so it's nice to have something not too heavy, but filling.
Another thing I do is cook up a bunch of bacon and freeze it because I really hate cooking breakfast, so it's nice to just pull some pieces out and zap them a minute.

Chrissy,

This one is Kroger brand, like Publix brand. The same things, name brand, is more expensive so I am glad I tried this one first.

Jane,

Ed is our grill cook and sometimes breakfast on the grill, the bacon idea is a good one as that microwave bacon the kids like but its expensive. I am terrible at preparing in advance. My answer to preparing in advance is taking a friend of the boys with us. His parents own an Italian restaurant and they load us up with deli meats and rolls ;)
