What Are We Serving For Easter?

I usually make a baked ham, fettucine alfredo, vegetable and a salad, but this year I bought a fresh ham and will marinate in mojo and maybe serve it with black beans and rice. If I don't do the black beans and rice a friend wants to make a potato casserole. In that case, I'll serve two vegetables and a salad.

What is everyone serving for Easter dinner this year?

I have two good options in the freezer - roast and turkey. I'll decide Thursday in time to get either thawed.

We're going to get hungry here.

What will this do for Heather when she checks in on the road.

What's mojo? Marinade in mojo?

We're going to a potluck on Sunday. I think there's going to be everything under the sun, ham and turkey, food galore.

We already have cupcakes and candy in the freezer. We might also make Richard's famous fruit salad. I'll have him post that when he comes home from work.

We're celebrating Easter on Good Friday with our daughter and grandchildren because they have hockey games on Sunday.

Thought about having ham, but really prefer turkey and so does our daughter, so we've settled for yet another turkey feast. I did offer to bring a small ham, but that idea has been declined.

Think I'll make either a lime chiffon pie with chocolate wafers or cherry cheesecake. They sound so yummy, I may make both! I'd have to leave leftovers with Christine, because more than one day would drastically affect our pledge to lose some weight. Think I'll make some buttermilk buns too and a yam and golden delicious apple bake casserole. That should keep me busy Thursday.

Christine has offered to host it at their house, so we'll go there.

"mojo" is a cuban marinate consisting of, olive oil, garlic, green peppers, onions & various seasonings. Living in Miami for many years I learned to love cuban food.
You can buy various marinades in the supermarket. I always add extra garlic to my marinades.

I will marinate the fresh ham (pork) for at least two days before cooking it.

I'll be doing a ham like my mom used to do, with cloves, cherries and pineapple rings or chunks dotted around on it.
glazed sweet potatoes and squash
mashed potatoes
corn
broccoli/onion/raisin salad (love this stuff)
fruit salad with pudding sauce
rolls

I'm going to wait this year and do this on the Orthodox catholic Easter because my daughter in law is orthodox and is presently in the midst of her lenten fast.

Our family tradition is a roast pork with crack black pepper coating. Serve with oven roast potatoes, fresh asparagus in butter, fresh carrot coins, home made biscuits & pan dripping gravy. That's what my Mom made every year for as long as I can remember and I've made it ever since I've had my own family.
Dessert is always lemon meringue pie.
When I was in the military I made it a point to invite single members that lived in the barracks to share Easter dinner with us. This year, I've 2 that will be joining my daughter and I. I'm really looking forward to it.

I going to serve this for dessert on Easter Sunday. You have to make some of this the day before.
I made this for Heather and Passinthru one time they were here for dinner.

SNOWBALL DESSERT.
This looks like a big snowball when finished. You could decorate it with jelly beans for Easter.

1 1/2 Tablespoon gelatin
4 Tablespoons cold water
1 cup boiling water
1 cup Sugar
1 cup orange juice
1 lemon (juiced - 2 Tablespoons)
2 pints cream (whipped or Dream Whip) 1 pint for cake, 1 pint for topping
1 Angel Food Cake (if sometimes buy two)
Coconut

Add Gelatin to cold water
Stir in boiling water until gelatin dissolves.
Add sugar, orange juice and lemon juice.
Let mixture partly set in refrigerator 20 - 30 minutes.
Fold in one pint whipped cream
Line a deep round bowl with waxed paper.

Cut off all the brown from angel food cake and break into pieces.
Place alternate layers of gelatin and cake in bowl, the last layer being gelatin.
REFRIGERATE overnight.

Turn out on plate and frost with one pint whipped cream and coconut.

Now you can put some jelly beans around the cake.

Chrissy, mmmmm, that cake was so good.

I don't know what we're having. My niece is bringing the dinner and cooking here, as I'd not thought to get home until tonight or tomorrow sometime and I'd not have had time.
It'll be nice to eat someone else's cooking for a change!
