Shaker Lemon Pie; Old recipe from Ohio

Yesterday I found Meyer lemons in the supermarket for the first time here. They are highly perishable and don't travel well, but have an irresistibly delicious lemon fragrance and are very juicy and unusually sweet for a lemon.
I am going to use them to make this old recipe and will let you know how it tastes. It makes my mouth water to think about it!

Shaker Lemon Pie
2 large or three small lemons
2 cups sugar
Cut the ends off the lemons and slice into a glass bowl, in paper-thin slices, rind and all, discarding the seeds.
Pour the sugar over the lemons and mix well. Cover and allow to stand overnight.

Preheat the oven to 450 F. Line an 8-inch pie plate with pastry and have a top crust ready.
Put into a bowl and beat well:
4 eggs
Stir the eggs into the lemons and mix well. Pour into the crust and cover with the top crust. Some recipes will tell you to brush the top with milk and sprinkle some sugar over it. This sounds good to me!
Bake at 450* for 15 minutes. Turn the heat down to 375 F and bake an additional 20 to 25 minutes or until the top crust is nicely browned. Cool on a rack.

You're killing me my love, I love any kind of pie that has lemon in it.
I think Passinthru also likes lemon pies.

Chrissy, what I am going to tell you, will probably shock you to the core, because I think you have NO idea of how evil I can be.
I am going to make this pie Sunday and have ONE little sliver after dinner. The rest I'll leave for my sister to munch on.

I first saw Meyer lemons in California abut 15 years ago. I could smell them all the way across the yard! Wished I could grow them ever since.

well , they are very easy to grow, all you gotta do is move to gods country. Louisiana.
Got another crawfish boil this weekend with the family, like I said when the CF's are running we take advandage of it. Danny

Yeah; that would be fine if it was just me. I would rather try to move the Pentagon than try to get my Mom to leave this house. It would be a lot easier. :P

OK, everybody; I have the lemons sliced paper-thin and soaking in the syrup created by the 2 cups of sugar.
I can hardly wait to taste this pie! I bake it tomorrow.
