Cajun Hot Sweet Pickles; Time to make these again!!!

This is one of my favorites, You can cut this recipe in half or fourths if it makes too many pickles for your needs.

Cajun Hot Sweet Pickles

1 gallon sliced hamburger dills or 4 quart sizes (easier to handle)
4 to 5 pounds sugar
1 small bottle of tabasco or other hot sauce

Drain and squeeze all juice from the pickles, the sugar will make more juice later. Get them as dry as possible. Put pickles into a large bowl and add 1 small bottle of tabasco sauce or less if you like. Add 4 to 5 pounds sugar and mix well.
It will start making juice right away. Spoon pickles back into jars, wipe top and cap well. Lay down on the counter and turn over occasionally. Keep turning till all the sugar melts, this may take a couple of days. I make two different batches of these, one for me and one for non cajuns. (Less hot sauce)Anybody make these with different ingredients? I would like to hear about it. Danny

Danny, I made a big jar of very good dill pickles last summer but Mom won't let me mess with them. She likes them sour, and I am trying to stay away from carbs. (Well, sort of. I am making the Cajun Crackers....)
I may have to wait til I visit you to taste these pickles. I have a feeling I will be introduced to a lot of very spicy foods; have to bring a case or two of antacids with me. ;)
I've said it before and will again: you certainly have a lot of very different recipes!

Miss Heather, If you think you can come to South Louisiana and not leave here with heartburn, and a smile on your face you are wrong ;) When I tell you we season everything I mean everything. When we go to Sonic we ask for Seasoned tater tots.
That not just salt its red and black pepper too. We even put tonys seasoning on popcorn. Anything we cook we season, so when you come be ready. Some people put salt on top of their beer, we even put tonys on that, (not a joke) Danny
