Boston Brown Bread; A must have with beans

1 cup all purpose flour
2 cups whole wheat flour
1 tsp baking soda
1/4 tsp salt
1 cup molasses
1 1/2 cups buttermilk
2/3 cup raisins (optional)

Preheat oven to 375 deg. (190 C ) Grease a 9x5 inch loaf pan. (I use the mini loaf pans usually).

In a large bowl, stir together all purpose flour, whole wheat flour, banking soda and salt. Mix in molasses and buttermilk. Stir in raisins. Transfer batter into prepared loaf pan or pans if using the small ones.

Bake for 1 hour (less if using the small pans), or until a tester inserted into the center comes out clean.

Sounds good Jackie - have you ever heard of Bishop's Bread. My Mom used to make that around the holidays. Different, but delicious.

I make Boston Brown Bread, except I steam it in cans. (Empty vegetable or bean cans, for example.) Fill the cans about 2/3 full, and cover each can with foil. Set on a steamer, and steam. This bread is great! I make it over the campfire.

I'm experimenting with cake steamed in a can, and brownies, too.

I had a recipe for brown bread that called for steaming in cans. If I remember correctly, it called for other types of flour as well, maybe rye?? I didn't do well with that method. :no:

My mother had, I believe it was an apple nut roll that she use to make in a coffee can. Haven't had that in years!!!!!!!!!!

I think my recipe (from "Better Homes and Gardens Cook Book") calls for corn meal, in addition to flour.

I stand in admiration of you, Jackie! I blushingly have to admit, in all my years of bread-baking I never made this good bread. It was available everywhere in cans; kept forever and so easy and inexpensive.
I used to make Boston-style baked beans about 2 Saturdays a month, and I'd open the cans, push the bread out, slice and butter the slices, and put them on a cookie sheet in the oven for the last 20 minutes while the beans stayed hot.
That and hot dogs, plus applesauce, made an easy and delicious cold-weather meal.

Heather, try it. It is sooooooo easy and better than the canned bread. Although we did have the canned bread yesterday! :P

I remember the Brown Bread in the cans too, but we used to spread the slices with cream cheese. Yum! Haven't had that in years.

We did the creamcheese for after-school snacks, too; I'd forgotten all about that. Slice the bread, put it in the toaster just long enough to make a little crust, and spread the cold cream cheese thickly. A little orange marmalade went over well too for the growing kids...(they are still growing vertically, not sideways... :P )
