There use to be a really sweet website called justcrockpotrecipes.com, but it apparently is no longer there. It had TONS and TONS of crockpot recipes. This soup is so easy and really good. 2 stalks celery - cut up 2 carrots - cut up 1 large onion - sliced 2 tsp salt 1/2 tsp pepper 1 tsp dried basil 4 cups uncooked noodles 3 pounds broiler/fryer chicken - cut up (I always make it with egg noodles, or the "no-yolk" noodles and use 3 chicken breasts with the skin and bones. I also put them in frozen as I have found that cooking them all day tends to make the chicken very stringy. Starting with them frozen seems to help that) Place the vetegables on the bottom of the pot, put the chicken on top, followed by the seasonings. Pour 3 cups (I use more, but that is just my preference) of water over. Set it on low and cook 8-10 hours. Take chicken out (carefully cuz it is HOT and falls off the bone) and put noodles in the broth, turning the crockpot up to high. Let the noodles cook for 45 minutes, while you take the meat off the bones. Mix the meat in. (Be careful when taking the meat off the bones. As careful as I am, I still usually find a piece or two of bone in the soup.) I put the chicken right back in the crockpot while the noodles are cooking. |

Sounds good, Jackie, but I think I would use boneless chicken

If you use boneless chicken you'll lose all the lovely, flavorful fat from the skin

I think you need the skin and the bones for the flavor. I guess you could replace some of the water with chicken broth if you used boneless, though. Thanks for the site! I really miss the one I use to go to! |
