I ain't Cajun, but I can cut okra. Its not like being there and its not like Mom's but I like the Zatarain boxed jambalaya and gumbo mixes. I don't follow the directions on the box to a tee though. Its boxes like Mac and Cheese or Cracker Jack. Does anyone remember that Cracker Jack tune about Having to have it now so what do you get -- Cracker Jack! It relieves the cravings until a real Cajun shows up. Hey! Okra! Isn't that another thickener for the low carb stuff (I'm not low carb either)? |

I listened to Julia Childs on an interview once and she said she learned how to cook because she wanted to please her husband and serve him good food. There is nothing that can replace that flavor in any dish. |

OK, OK. Ed just cooked pork loin and blackened catfish. We had friends over and I am drinking my merlot. I don't think I will look any further for pre-prepared brands, cuz he may stop cookin. I am not much of a cook so I have spent no time on this forum but looking over some of the recipes I think even I could do it...esp the ones where you just combine a bunch of stuff. Kate, Trust me...any recipe I post is easy. Throwing together a bunch of stuff is my style of cooking Try the Reuben Casserole I posted that's in here somewhere. It really is good.

I have to stay away from pre-made foods as the salt content is usually so high. We pretty much use fresh ingredients in everything. That said, you can still take a bunch of raw ingredients and come up with an easy and delicious recipe. IMO, everyday cooking isn't anything more than being able to read and having the patience to follow directions. My biggest disasters came from assuming I knew how to do it. |

I made blackened catfish once, except I called it burnt catfish, threw it away. I think Chef paul prudhome burnt something once and decided to call it blackened to save face. Nothing against him, only no cajun I ever new did on purpose to (blacken) any dish. LOL Danny |

Danny, it is very, very good. Ed makes it so hot to his taste however that sometimes I don't know what kind of fish or fowl it is. Actually he does not do that for company or if he knows I am going to eat. Friends and neighbors come from all around to eat it. He cooks it outside on deck in iron skillet, we are on an acre and neighbors still can smell it and call looking for a bite. We have friends originally from MS/LA that taught him to cook it years ago. He gets his seasoning from Chef Paul. He's a hot sauce guy so he can make a mean chili too. I am reading back over recipes on here, lots of good stuff... those Cajun Crackers I have got to try and Pat's Reuben casserole. Kate |

Can hardly wait to get to Lousiana later this week. We'll be pan-frying the red fish, steaming the crab, and peeling good oranges. Oh, all the goooood food!
Once in Oklahoma, I stuffed okra with cheese, battered them with merangue batter, and fried them. They were really good! Louisiana oysters are the best. We had fresh oysters in Washington state, and they were OK, but we miss Lousiana ones. I've had fresh oysters in the Mediterranian, and Louisiana oysters still rank among the best! |

Trailblazer, I dont know what part of Louisiana you are going to, but if you find basin crawfish, get them boiled. With corn and potatoes, and if you are lucky some sausage mixed in it. tell me where you are plan on going and I might be able to steer you too some true cajun resturants.
