I've known about this sauce for ages but somehow never made it. Lots of people being on low-carb this year, I wanted something to moisten the turkey without all that flour. This was a HUGE hit, and is a foolproof recipe. 1 cup white wine 1 large shallot, peeled and minced In a small saucepan, boil together until reduced to about 1/3 cup. Add: 1 cup turkey stock or chicken broth Boil until reduced by half. Then add: 1 cup heavy cream Boil to reduce slightly. Taste for seasoning and serve. I took this another step and when the turkey was ready to move to the platter, poured all the drippings from the roasting pan into a separator pitcher, then poured only the juice part (not the fat) into the sauce and boiled it some more. It was totally delicious! |

I love all these low-carb delicious recipes. And gourmet too! Gives me so much hope for keeping the weight off I've lost in 6 months. This recipe for sauce for turkey sounds wonderful. |

Really surprised me, Chrissy; something so easy could taste so good. The pan drippings have a lot to do with it, I think, though this is a classic French sauce. |

Ofcourse, I would like to have my PASTA sauce that has heavy cream in it and pour it over pasta. Not good for low carb. I'm hoping to make a conserted effort when we get home to go on low carb for a good two weeks. NO CHEATING............... |

Miss heather, If you want to lose a few vanity pounds, and come to S. Louisiana( not N. Louisiana) they cant cook , I can put about 20 extra on you in a weekend. LOL Danny |
