1 lb. dry blackeyed peas 1 lb. smoked pork tasso (easy to make your own) 1/4 cup green onions chopped salt red and black pepper to taste ( 1 tea. each) 1 tea. parsley chopped fine Put blackeyed peas and tasso into a big pot. Add water to cover contents. Cook until tender (about two hours) on med.to high. Add hot water as water boils away, always keeping the water over the meat and peas. After peas and tasso have boiled about one hour, add chopped green onions, and parsley, and the seasoning. Great with a big ole piece of hot cornbread and butter. Danny Makes enough for 8 people or 3 hungry cajuns.LOL Danny |

Danny, that is a different recipe from the one I made last year, ( from the recipe in the booklet that you sent me). Now I have to get some more tasso. That stuff is too good! |
