Improvising And Avoiding Disaster; Great sweet Potato Dish!

My sister is well-known for being the klutz of the family; you can always depend on her to mess up. (She freely admits this and knows we love her anyway.)
Yesterday she showed up a little early, having volunteered to bring the sweet potato dish. Well, the dish was not only not made; it wasn't even put together. She had cooked the sweet potatoes but she'd forgotten them and they were woefully over-boiled; just mush.
We not only salvaged it but made a whole new dish of it! I set her to peeling the potatoes (boiled in their skins) while I got out butter, cream, and an egg. We put the taters in a pot and she mashed them, then added the butter and cream while I beat the egg and then whipped it in until all was smooth and well-blended. That went into the deep casserole, spread out about 3" deep. She then peeled and thinly sliced the apples and made a thin layer of them almost to the top of the casserole. We topped that with a layer of pecan halves, then covered it with a thick layer of brown sugar, then I topped it with about ten thin pats of butter.
It sat on the counter til about 1 1/2 hour before serving time, then went into the 350* oven for about an hour and ten minutes.
Well, it was fabulous! The sweet potato was fluffy and light like a thick souffle, with the layer of hot apples, crunchy pecans and brown sugar on top. Everyone loved it!

I didn't make the sweet potato and apple bake for Thanksgiving this year. It was just Frank, our son Francis and me. I made a 15 lb. turkey with all the other traditional dishes. It was a lot of food. I
