Braciole Recipe For Heather

1 3/4 pound flank steak, salt & pepper to taste
2 Tablespoons pine nuts, toasted
1/3 cup chopped fresh mint (I don't include the mint)
1/3 cup chopped fresh parsley
4 cloves garlic, crushed
1/4 cup freshly grated Parmesan cheese (not out of a can) Oh my Gawd......Never use parmesan out of a can.....
juice of 1 lemon


Place meat on the counter and pound it out a bit to tenderize and flatten. Add salt & Pepper to taste.
Place pine nuts in a small frying pan and toast them over low heat til golden brown. Place in small bowl with mint, parsley, garlic, cheese, lemon juice and 1 tablespoon olive oil (I use extra virgin). Stir together and rub on the meat. Roll the steak up tightly across the grain of the meat like a jelly roll. Tie the roll together with string to secure. Season the outside with salt and pepper to taste.

You can brown the meat in a bit of oil, but I just put it in the Italian red sauce that I make. Simmer on low for 1 hour.

p.s. I put a bit of the olive oil and rub it on the meat before I stuff it.

Thanks, Chrissy, another for the files. Next time you're here I have to show you my recipe filebox. My Dad made it for me years ago and I keep only the special recipes in it; the ones I really use.

Chrissy, even if you had a comeback for that line, reticence would have been the best move. :P ;)

Danny, almost all the recipes you ever posted are already in that box. :) I made the chicken gumbo Monday night and it was good. I used Italian sausages (homemade at the meat market down in the village) and they worked just fine, though probably not quite authentic. Also had to make my own roux, as we can't buy it here.
