We went to a wedding reception last night in Saratoga at the Canfield Casino in Congress Park. I would suggest you click the link just to see the rooms of this building. Incredible! We had cocktails in the Gaming Room and dinner in the Ballroom. The building itself was built in 1870 and thrived during the heyday of the Whitneys and the Vanderbilts. Both rooms look exactly the same, btw. Anyway, whoever did the catering (and the food was fantastic) had some interesting presentations for the served hors d'oeuvres that I thought I would pass along if you entertain someone special. 1. Shrimp and cocktail sauce - a plain dull finish round tray (pewter?) had a layer of whole cranberries with a dish in the middle for cocktail sauce. Lemon slices were placed on the berries and one gorgeous shrimp was on each lemon slice. Neat! 2. Slices of kiwi fruit were placed on a tray with a cold crab cake affair on each one. Each crab cake had a dollop of something on top of it. Very clever to see and delicious to boot. 3. On a layer of what looked like small crumbs of stuffing mix? were placed very long, thin slices of some kind of squash, probably zucchini or even a seedless cucumber. You could see a fair amount of stuffing, if that's what it was, between the slices of squash, and scattered on the stuffing were sliced green olives with pimento. The actual appetizer was shrimp wrapped in proscuitto scattered here and there on the squash. That was very good too but none of us could figure out the other taste - the shrimp must have been marinated in something before it was wrapped in the ham, but we couldn't pin it down. So, if you want to make a splash some night, consider these little presentations and if you are ever around Albany, NY go north to Saratoga...lots to see and do. The Casino is also a museum and open to the public. Gorgeous homes all up and down North Broadway...and on other streets too. Bring money - the stores are not cheap!

Jackie, Close - surely no hot wings, but some very good beer and top shelf liquor. The waitstaff wore tuxes with white gloves, AND they had a napkin folder, to give you an idea it wasn't the local watering hole! (We went to one of those later after we changed our clothes, LOL!) It was a lovely wedding and reception. Not cheap, to be sure. Glad our four are finished, and their receptions were not in this category. But, even I can afford whole cranberries and lemons to make a splash with a shrimp appetizer. Some of the best ideas are still cheap. |

All of my cousins' weddings were like that. Some were at the WTC in Boston, others at top notch places as well. Kinda feel out of my element when I get up to go the bathroom and return to find every crumb wiped, my glass of water filled and my napkin folded! Give me a beer and hot wing kind of place anyday!!!! LOL (But it is nice to play dress up once in a while, though) |

That is a lovely place. Know what you mean about creative and easy appetizers. Picked up the December issue of Canadian Living and they had some 'great' ideas about presentation. Square-cut seedless cucumber with a spread on top with a sprig of dill on top Spinach and Red Pepper Pinwheels using tomato-flavoured tortilillas, cut into 'rounds. Top toasted banquette slices with Brie cheese & a slice of strawberry. One of my favourites that looks stunning is a naval orange, with toothpicks inserted in it with 3 different coloured cheeses at the ends. Surround with something green and red like olives. Or you can use fresh holly at the base. Mushroom or sausage phyllo rolls are easy to do and always look great. Real Pineapples with 'real' pheasant feathers added is unusual and very Christmasy. Any of the smaller fruits can be hollowed out to use as container for spreads. Pears are good. Surround a turkey with fresh pomegranates, sweet pickled crab apples and onions--intersperse a few leaves from a spice and add a few fresh cranberries to really dress up the turkey. Use ginger bread cookies around the base of candles to make a centrepiece c/w some sprigs of artificial or 'real greenery behind them. Sylvia |

we did a really cute presentation of hot dogs for a kid's party last year. make a 'sea' of something green, like green spaghetti or spinach leaves..anything green. cut the dogs about half way, making 4 or 6 'arms' on an octopus. a couple of mustard dots for eyes. the kids loved them. |
