Looking For Peanut Butter Cookie Recipe

While grocery shopping yesterday, I saw some "sticks of peanut butter" by Jif. They are similar to the sticks of Crisco, except they are peanut butter.

I thought it had been years and years since I made peanut butter cookies, so I bought it and made some today. Followed the recipe on the package.

They are ok, but far from "wow". If I'm gonna go to the trouble of making them, I want "wow". LOL

Anyone got a really good peanut butter cookie recipe??????????

This is an easy one for travelling. Just scoop some peanut butter in a bowl, with your choice of sweetener, like sugar or honey or splenda. Mix in instant oatmeal, or quick-cook oatmeal, raisins or nuts or sesame seeds, or anything you want. Roll little handfuls into balls, and eat. Or roll the balls in powdered sugar or sesame seeds. These are quick and easy cookies. Since we don't have an oven, and do not have a dutch oven on board, this is our cookie recipe!

OK I will give this recipe to you but you have to promise not to tell anyone!!
This is one I found in the bobcat bites cookbook.
My MA-MA did not have anything in her box for this. ( dont know why)

PEANUT BUTTER FUDGE
Wayland Shirey 1980

1/2 cup butter
1 lb. brown sugar
1 lb. confectioners sugar
1/2 cup milk
3/4 cup peanut butter
1 tsp. vanilla

In medium saucepan, melt butter, stir in brown sugar and milk. Bring to a boil; boil and stir 1 & 1/2 min. remove from heat and stir in peanut butter and vanilla.
Mix confectioners sugar, beat until smooth. Spread into buttered 9 inch square baking pan.
Put on window sill or in Icebox (refridgerator ) for the (northerners.) When cool cut into squares. Danny (cajun microwave) thibodeaux

This recipe was one of the few things I dreamed up during my health-food phase in the '60's and '70's, that survived the years. Really good, tender and crunchy, and good for you, too!
Keep wheat germ in the freezer if you're not going to use it within a few weeks and it will keep a year. If you haven't used it before, try it! It has a lovely nutty taste and makes the cookies really delicious.


Oven 325*
1 cup whole-wheat or white flour
1/2 cup wheat germ
1/2 tsp salt
1 tsp. cinnamon
1/2 tsp. baking soda
1 cup dark brown sugar
1/2 cup butter
1/2 cup crunchy peanut butter
1 egg
1 tsp. vanilla
Stir the dry ingredients together. In the mixer, cream the butter, peanut butter and sugar til fluffy and beat in the egg and vanilla. Add the flour mixture at lowest speed and blend.
Drop by spoonfuls on a baking sheet and criss-cross with a fork dipped in a little flour to keep it from sticking.
Bake about 15 minutes or til beginning to brown around the edges. Cool on racks.
