Here are a couple of recipes for sweet breads I bake every year. Applesauce Nut Bread 1 1/4 C sifted all purpose flour 3/4 C sugar 1 tsp salt 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 1/4 tsp nutmeg 1 C quick or old fashioned oats, uncooked 1/2 C finely chopped nuts, pecan or walnut 1 1/4 C canned sweetened applesauce 1/4 C vegetable oil 2 eggs, beaten 1/4 C milk Sift or mix together all the dry ingredients Mix all the wet ingredients, add to dry. Stir well. Makes 6 mini loaves, fill each pan 2/3 full, place on cookie sheet. Bake 350 degrees 35-40 minutes or until toothpick comes out clean. Cool 15 minutes, remove from pan. Store one day before slicing. You can make one 9x5x3 inch loaf. Increase baking time to 55-60 minutes. ----------------------------------------------------------- Orange Marmalade Nut Bread 1/2 C margarine or butter 1/2 C packed brown sugar 2 eggs 1 10oz jar orange marmalade 2 3/4 C flour 2 tsp baking powder 1 tsp salt 1/2 tsp baking soda 1/2 C pure unsweetened orange juice 1/2 C chopped nuts, your choice Cream margarine and sugar until fluffy. Add eggs one at a time, mixing well. Blend in marmalade. Add combined dry ingredients alternately with orange juice, mixing well. Stir in nuts. Makes one 9x5x3 inch loaf. Bake 325 degrees 1 hour and 20 minutes on until toothpick comes out clean. Cool 15 minutes, remove from pan. This one also makes good mini loaves, about 6 of them. For rounds, use a 1 lb coffee can...or use regular sized cans, fill a bit over half full...when cooled a little, take the botton of the can off and use it to push the bread out of the can. |
