Have ready: 2 Cups boiled sweet potatoe sliced thin 1 1/2 cups tart apples, sliced thin 1/2 cup brown sugar 4 tablespoons butter 1 teaspoon salt Put half the potatoes in a buttered baking dish. Cover with half the apples, sprinkle with half the sugar, dot with half the butter and sprinkle with half the salt. REPEAT. Cover and bake 1/2 hour at 350 degrees. Uncover, bake until the apples are soft. The last five minutes of baking I cover the top with small marshmallows until slightly browned. |

Chrissy, that's just the same as ours except for the marshmallows. We use pecan halves instead; they're not quite as sweet. When we were small, Mom used to make whipped sweets with whole marshmallows on top and baked til they browned. That was when marshmallows had some body to them; they would stay on a toasting fork even when melted all the way through. Remember them, Campfire marshmallows, in the little 2-layer paper boxes? |
