Broccoli Bake 1 Pkg. Frozen Chopped Broccoli 1/2 Can Cream of Mushroom soup 1 Egg (beaten) 1/2 Cup Mayonnaise 1/2 Small onion (chopped) Salt & Pepper 1/2 Cup Sharp Cheddar Cheese (Grated) Cracker crumbs or bread crumbs Cook Broccoli for 5 minutes - drain Mix first (6) ingredients and add salt and pepper to taste. Put in casserole and top with cheese Add cracker or bread crumbs and dot with butter. Bake at 350 degrees - 45 minutes. I usually add more broccoli to this recipe. Good for South Beach diet or Atkins. |

Chrissy, I'd like to make this for Mom but think it might be too salty for her. I could make my own bechamel and saute a few mushrooms instead of using the canned soup (unless they make a salt-less variety). Maybe use 1/4 cup each, sour cream and myo. That should cut out about 1/2 the salt. It sounds so good! She absolutely loves Campbell's Tomato Bisque, but it makes her ankles swell up like water balloons. I have to learn to make it myself. |
