Have you ever had a knock at the door and all of a sudden have to feed a crowd of 6 or more people? Here's what I've done when it's happened to me.... First get a large shallow baking pan and fill with bite sized peeled potatoes. Coat potatoes with olive oil (I use light) sprinkled from the bottle and lemon juice (you can use that instant lemon juice out of a bottle - I do ) Sprinkle with mixed herbs, mediterranean oregano, lemon pepper, onion salt and bake for around half an hour or until lightly browned and edges are crunchy. I call this "greek potatoes" cause we greeks like to cook with olive oil and lemon often.
While they are cooking.... Always keep in your freezer those frozen packs of chicken tenders or breasts and throw a pack or 2 in the oven. You know those precooked packs which take around 20 minutes to cook. They can cook while the potatoes are cooking. Make a nice green salad using fresh lettuce, tomaHtoes cucumbers, snow peas, bite size cheese pieces and baby carrot slices. Nice and colourful. Top it off with Garlic or french bread and voila......food for a crowd within a half hour and very little mess to clean up afterwards. |

that's a good idea, Annie. I usually just throw together a big macaroni and cheese casserole with salad on the side. or, if I have some frozen cooked chicken, I make a big chicken/rice casserole with salad. I've done the potatos, and they are mm mm good.!

Chicken sauteed in a little oil and tamari sauce....yum! Slice vegetables to dip in home made ranch dressing...or I love to make a big casserole like tamale pie, with a salad and french bread or warm tortillas. Tamale pie is easy and quick to throw together, then bake. Or an easy casserole like... cooked hamburger, cans of mushroom soup, cooked noodles, canned green beans, and grated cheese. Just bake it all together. You can't lose on this one. |
