Hey y'all. I'm back on the board after months of not knowing I was actually here and I know that some of you are lo-carbers. Would love to share some of your tricks, recipes, inspirations, etc with you. I'll start with tonight's fair: chicken fingers parmasan 2 chicken breasts, deboned, skinned and cut into strips about 1" thick 1/2 cup lo-carb creamy ranch dressing (I use Kraft a Canadian brand) coating: 1/3 bag of pork rinds - smushed up into crumbs ( I just use my kitchen mallet) 1/4 cup grated parmasan cheese garlic powder Montreal steak spice dip the chicken strips in the ranch dressing to coat. coat with coating mixture. back for about 25 mins (I use my Pampered Chef stoneware backing sheet) Serve with more ranch dressing to dip (optional) and a fresh greek salad. |

I guess you know, I am a low-carber. At least, I try to be. My 86-yo Mom has adopted the idea in a way, though she won't admit it. When I started, everyone told me it was a terrible idea; my sister brought or e-mailed tons of material preaching against it. Well, guess what! After 2 years, I have lost and kept off 25 lbs (though I need to dump another 20), and my Mom has lost about 5 (she still won't give up her daily dry cereal or her crackers and jelly). My sister has not lost an ounce, though she gets more exercise than I do. My cholesterol levels are lower than either of theirs and I feel great. Basically all I did was cut out the white foods. It works great! We eat lots of chicken, turkey, seafood, pork, and lean red meat about once or twice a week. We eat all vegetables, at least 2 with each meal except breakfast. Lunch is always a salad with lettuce, cooked and raw veggies, cottage cheese or sliced leftover meat or cheese, and vinaigrette dressing made with olive oil. (We use gallons of olive oil). We almost never have dessert except for special occasions. We could probably eat more fruit. Mom eats half a banana every day and it is one of the few things she insists on. We both eat all the fresh berries we can get, especially raspberries and blueberries, and some apples and citrus, and I pig out on apricots and cherries in season. We both take supplements, of course. I don't try to substitute low-carb for classic ingredients, thinking that substitutes just make me miss the "real thing" more. Simple cooking is the healthiest, anyway, and the less time I spend in the kitchen, the better. BTW, you will note that chocolate is NOT a "white food".

I started my lo-carb lifestyle on Jan 4, 2003. By the end of March, I'd taken off about 30 lbs and by the summer, was down 46 lbs. I've kept the lifestyle of no 'white food' up since then; about 15 months and have taken off a total of 59 lbs and counting. If I take 1 lb off a month or even remain the same, I'm happy. My parents (80 and 85 yrs old) started on it the summer before I. When I visited them at Xmas of 2002 I couldn't believe how much weight they'd both lost. My Mom (who gave birth to 10 of us) looked 60 yrs young. My Dad, at 6'4" and always in the 250 lb mark, again looked 10-15 yrs younger and as fit as Jack Lelain (if you can remember him). My eldest sister, who is 58, also went on it when she saw the results my parents were having, and she has in 2 1/2 years, lost over 90 lbs and went from a size 26 to a size 10. She always said she was born wearing a size 14 and was always a 'big girl' while growing up. Needless to say, I was/am convinced its a good thing. I too have put up with all the good intentioned people telling me of the unsafe, unhealthy part of lo-carb, but I know how effective its been for me and will continue on it for the rest of my life. I too take supplements but very rarely eat fruit other than berries and the occasional apple. My main source of junkfood is pork rinds. I'm not big into chocolate but if I do need a fix, I'll have an Atkins bar. I don't miss potatoes one bit and make up for the pasta with lo-carb pasta about once every two weeks or so. Instead of having it as a meal, its now a side dish. I've given up nothing but the weight. |

Colleen, what a great story and a healthy one too. My husband lost 50 lbs on Atkins Diet, but I for some reason couldn't deal with it. After two weeks I felt sick. A year later I started the South Beach Diet and have had good results. I missed the fruit more than anything (my glass of juice in the morning). We have just returned from a 5 week vacation and the two of us ate everything we could get out hands on. Now, we both have to try and get back on the diets to lose the few lbs. we put on. I've said this several times on other posts, I miss the pasta and rice a lot. |

I stayed at a wal-mart once in ne Texas. I was very tired. I drove through the rv park recommended to me and it looked like a 3rd world settlement. I never stopped until I came to a wal-mart. Rested the night very thankfully. |
