Those of us who live in the upper midwest know about stinging nettles that cause a stinging sensation when handled and even a rash. However many do not know of their folk medicine uses. Nettles were once used to cure scurvy, to treat gout and ague and for the stings of "venimous" insects. Nettle greens are rich in vitamins A and C, very high in protein, and make delicious greens. They must be gathered with stout gloves and repeated cookings, pouring off the water each time, washes away the stinging hairs. To make nettle soup, gather plants in the early spring. Cook a long time to destroy the stinging. Strain thru a colander. Add milk, chopped onion, and black pepper. Cook in soup. Thicken with butter, flour,and two egg yolks. Season with salt and pepper. (Then pour the stuff out and go to Hardees or Burger King and get a large juicy burger with all the goodies and a large order of fries.) :yes:

I've put on 5 lbs. just reading all these great recipes.

I've got one more that is easy and everyone seems to like..

Scallops Sauteed in Garlic & Tomatoes

1 Lb. Scallops
4 Tbsp. Butter (1/2 Stick)
4+ Cloves of Garlic
1 Cup Diced Fresh Tomatoes
1/4 Cup Minced Parsley
1 Tbsp. Lemon Juice
Salt & Pepper to Taste

Cut large scallops in half. Dry on a paper towel and lightly dust with flour. Heat butter in a skillet, add garlic and mix. Add scallops and saute until they are lightly brown. Stir in the tomatoes, parsley and lemon juice. Season with salt and pepper.

The cooler weather is almost upon us. This is an old time favourite which I make often and serve 'round the fire--it's a must for Christmas Eve in place of Egg Nog, that I've never been fond of--way too many calories:

Crockpot Hot Buttered Rum Cider:

Ingredients:
4 cinnamon sticks -- broken
1 teaspoon allspice--whole
1 teaspoon whole cloves
7 cups apple juice
1/3 cup packed brown sugar
margarine -- or butter
1 cup rum
1/2 orange sliced

Preparation:

Rum is optional; use more or less as desired. Tie cinnamon, allspice, and cloves in spice bag or cheesecloth. In a crockpot, combine spice bag, apple juice, rum and brown sugar. Cover; cook on low-heat setting for 3 to 4 hours. Add orange slices for the last ˝ hour. Discard spice bag. Ladle hot punch into cups; float about 1/2 teaspoon of butter on top of the cider in each cup.

Making it in the crockpot, gives the RV or house a wonderful aroma.

Ingredients :
1 cup flour
1/2 cup butter/margarine
3 oz pecans, chopped
1 (8oz) package cream cheese
1 cup icing sugar
1 tub "Cool Whip" (1 litre)
1 pkg. (4oz) vanilla instant pudding
1 pkg. (4oz) chocolate instant pudding
3 cups cold milk
1 square semi-sweet chocolate, shaved

Instructions :
1) Mix flour, butter and pecans and press into a 7x13-inch pan. Bake at 350 for 25 minutes. Cool.

2) Combine cream cheese and icing sugar and spread over pecan mixture. Spread half of the Cool Whip over the cream cheese layer.

3) Mix package of vanilla pudding using 1-1/2 cups of milk. Spread over Cool Whip. Mix package of chocolate pudding using remaining 1-1/2 cups milk. Spread on top of vanilla pudding. Spread remaining Cool Whip on top and sprinkle with shaved semi-sweet chocolate.




Now I have never made it but have had it a few times. See, during the main season at work we would have treat Fridays. Oh some of the stuff was sooooooooo good.

Hmmmm, Is It Really Better Than Sex? Cake.

1 (18.25-ounce) box yellow cake mix, plus ingredients to prepare
1 (20-ounce) can crushed pineapple
1 1/3 cups sugar
1 (3.4-ounce) box French vanilla pudding, plus ingredients to prepare
1 1/2 cups heavy cream
1 cup flaked, sweetened toasted coconut

Preheat oven to 350 degrees F.

Prepare yellow cake mix as directed using a greased 13 by 9 by 2-inch pan and bake for 30 to 35 minutes. While cake is baking, combine the pineapple and 1 cup of sugar in a saucepan, and bring to a boil over medium heat stirring constantly. Remove from heat and allow to cool slightly.

Remove cake from oven and using a fork, pierce holes into cake. Pour pineapple mixture over hot cake and set aside.

Prepare pudding according to package directions. Spread pudding over cake and refrigerate until thoroughly chilled. Whip heavy cream and remaining sugar until stiff. Cover top of cake with whipped cream and sprinkle toasted coconut on top.
