well, I already posted some of my favorites over on RV Net, but here's a good chicken one: Ingredients 4 lb chicken wings or you can use small thighs 1/2 cup butter 1 cup grated parmesan cheese 2 tbsp dried parsley 1 tbsp dried oregano 2 tsp paprika 1 tsp salt 1/2 tsp freshly-ground black pepper Directions First, preheat the oven to 350 degrees. Cut the wings up into "drummettes". (Freeze the pointy "tips" for soup -- they make great broth!) Then combine the grated cheese and the seasonings. Line a shallow baking pan with foil. (Do not omit this step, or you'll still be scrubbing the pan come New Year's Day!) Melt the butter in a shallow bowl or pan. Dip each "drummette" in butter, roll in the seasoned cheese, and arrange in the foil lined pan. Bake for 1 hour at 350 degrees. Kick yourself that you didn't make a double recipe!! |

and here's one more chicken recipe...tastes like king ranch chicken Dorito Chicken Casserole 1 Chicken 1 pk Doritos (nacho cheese flavor) crumbled up. I used the big bag the first time, but it was too much. Use half a big bag for a more moist casserole. 1 cn Corn (whole kernel) Cheese (grated; to taste) 1 sm Onion (diced) 1 cn Cream of chicken soup 1 cn Cream of mushroom soup 1 c Milk 1 cn Ro-tel tomatoes Boil and debone chicken. Layer chicken, Doritos, cheese, onion, and corn in casserole dish. Mix chicken soup, mushroom soup, milk and tomatoes. Pour over casserole. Top with cheese. Bake at 375 degrees for about 30 minutes. |

My pleasure. Do one head of garlic per person. Just take off the outer flaky shell and cut off the top of the garlic. Just about 1/4 of the way down. pour some good olive oil over the heads of garlic and sprinkle with a course sea salt. Cover with foil and bake it in the oven at 375 for about 1 hour. I serve it with "Camonbolo or Camonzola" cheese, I don't know the spelling of it (It has a blue label) and looks like a Brie or Camembert with a vein of blue cheese through it. Just get the thick pita bread and brush it with olive oil, sprinkle it with course sea salt and fresh rosemary. Put it under the broiler to heat it up and toast it lightly. You have to watch it closely in the oven, as it will burn easily. Just cut the pita into wedges and serve with a small slice of the cheese.That's it, easy as can be, We love it, and you never get complaints. This is one of the best appetizers that you can find, don't worry about anyone smelling of garlic, it won't happen - serve with your choice of wine - don't offer seconds or you will spoil your meal. |

Blueberries are in now. Here's a great way to make the most of them. Grammy's Blueberry Cake Oven 400* 2 cups flour 3 tsps. baking powder 1 scant teasp. salt 3 TB butter 3/4 cup sugar 1 egg, beaten in a 1-cup measure; add milk to make 1 scant cup Sift the dry ingredients into a bowl. Add the butter and sugar and mix in as for a piecrust, using fingers or a pastry blender. Stir the milk mixture into the flour mixture, keeping the mixing to a minimum. Gently stir in: 1 1/2 cups fresh blueberries Spread in a well-buttered (I use baking spray) 9x9" pan. Sprinkle with cinnamon sugar (I use about 1/2 cup sugar mixed with 1 1/2 tsps. cinnamon) Bake 35 to 40 minutes and eat warm. YUM! |

Heather, My mouth is watering. Still can't eat cake on this diet, but I must admit I went off the diet this weekend, as we had company. I think I drank more than I ate, but I will look forward to a piece of that blueberry cake when I see you. Freeze some please.

Zucchini Pancakes 1/3 cup Bisquick 1/4 cup grated Parmesan cheese 1/8 tsp pepper 1/4 tsp salt 2 beaten eggs 2 cups shredded zucchini Mix the dry ingredients in a bowl and quickly stir in the eggs and zucchini, just til the flour is moistened. Melt about 2 TB butter in a large frying pan and drop the batter in to make little pancakes. About 2 minutes to a side. Serve HOT on little plates with a dollop of sour cream if you like. These are great with drinks before dinner. |

Silvia, I'm on the low carb, but haven't been sticking to it lately. We have had a lot of company and I can't seem to stick to it 100% any more. Staying away from the pasta and rice is killing me. I did make spaghetti, meatballs, sausage last week because some of Frank's family came for dinner. I love Cuban food, but can't eat the rice. I need to get back on the diet. I walk past the mirror and think some old bag is living in my house. IT'S ME..... I did have some m&m's this weekend. love them. |

KEY LIME CHEESECAKE Ingredients: 3 Tablespoons butter 1/2 cup ground almonds (or walnuts, or pecans) 2 Tablespoons Splenda 1 cup boiling water 1 small box (3 oz) lime sugarfree gelatin (Use Cottee's Brand for Splenda sweetened version.) 1/2 pint heavy cream 8-oz package Philadelphia Cream Cheese 3 Tablespoons Nellie & Joe's Key West Lime Juice 1 cup Splenda For Crust: Melt butter in a pie plate. Press in ground nuts mixed with 2 Tablespoons Splenda. Let chill in refrigerator. Meanwhile, make filling: Mix water with lime sugarfree gelatin. Set in refrigerator to partially set up. In a bowl, whip heavy cream. Set aside. In a large bowl, beat cream cheese, key lime juice, and 1 cup Splenda until smooth. Very lightly mix in partially set lime gelatin. Fold in whipping cream. Pour into pie shell. Chill 2 to 3 hours. Top with additional whipped cream if desired. Serves 10 - Carbs per serving: 4.5 *** See ... and I was on a low carb diet -- it's a snap to stay on that diet. ![]() I made pizza using hamburger and ground pork for the crust while we were on that diet! |

Try this when your in a hurry. or you are doing 3 things at once. Brown 4 boneless chicken breasts in a skillet (be sure its a deep one) While browning cut up a few potatoes, dice some garlic and slice some mushrooms. Also cut up a large white onion. When the chicken is brown turn down the heat and pour in the potatoes,mushrooms, onions and garlic. Top it off with 2 cans of cream of mushroom soup. Let simmer until potatoes are done. About 45 minutes. Complete meal in a single pan. If you like stovetop stuffing it goes well with this dish. |
